What is Quercetin?
Quercetin (CAS 117-39-5, C₁₅H₁₀O₇, MW 302.24) is a plant-derived flavonol belonging to the flavonoid class of secondary metabolites. Chemically, it is 3,3′,4′,5,7-pentahydroxyflavone—a yellow crystalline powder with five hydroxyl groups that underpin its biological activity. The compound is practically insoluble in cold water (2.2 µg/mL), sparingly soluble in hot water, but soluble in alcohol and fat-soluble solvents.
Biological Activity and Research Applications
Quercetin activates SIRT1 and inhibits PI3K with IC₅₀ values of 2.4 µM for PI3Kγ and 3.0 µM for PI3Kδ. It also downregulates TGF-β1 and SMAD3, suppresses STAT3 phosphorylation and nuclear translocation, and inhibits JAK2/STAT3/PD-L1 signaling—mechanisms with relevance to oncology and inflammation research.
